5 gallon batch
8' pilsner malt 1.5' flaked maize Step mashed, 122* for 30 min, 138* for 20 min.,154* for 45 min., mash out at 168* for 10 minutes. Sparge to collect about 7 gallons (my system boils off about 2 gallons per hour) 60 minute boil. Hops: Bittering: Cluster pellets, 7.2% AA, 0.8 oz (27 IBUs) Flavor: Crystal pellets, 4.5% AA, 0.5 oz. (3 IBUs) Aroma: Crystal pellets, 0.5 oz. 10 minute steep after boil WLP830 German Lager Yeast Primary at 50* for 12 days, secondary lowered to 34* at 2*/day, 6 weeks OG 1.058, FG 1.0144 lb
